How to cook Shrimp Singing in Calamansi & Lemon (Sinigang na Hipon sa Calamansi at Lemon)
Sinigang is a Filipino soup or stew characterized by its sour and savoury taste most often associated with tamarind (Filipino: sampalok). It is one of the more popular viands in Philippine cuisine, and is related to the Malaysian dish singgang.
Variations of the dish derive their sourness from ingredients such as guava, calamansi, kamias, santol or unripe mango.
Ingredients:
250g Shrimps (tendrils trimmed & cleaned)
5 cups Water or Washed Rice water
1 thumb-size Ginger (sliced)
2 Taro Roots (peeled & quartered)
1 small Radish (peeled & sliced)
6 small Okra
150 grams String Beans
1 medium Eggplant
1 medium Tomato (wedge)
1 small Red Onion (quartered)
2 Serrano Peppers
1/2 cup Calamansi Juice
1 small Lemon
Bunch of Kangkong (water spinach)
Bunch of Talbos ng Kamote (Camote tops)
3 tbsp Fish sauce
Salt and pepper
