Chicken in Tamarind Soup + a twist of calamansi! YumYum
Sinigang is a Filipino soup or stew characterized by its sour and savoury taste most often associated with tamarind. It is one of the more popular viands in Philippine cuisine, and is related to the Malaysian dish singgang.
Filipinos like to cook sinigang with green long peppers in order to enhance the taste and add a little spice to the dish.
Ingredients:
500g chicken (medium cut)
Chicken liver (optional)
200g fresh tamarind
3 pieces Okra (cut into halves)
1 bundle water spinach (separate leaves and stem (cut in 2”)
3 pieces string beans (cut into 2”)
1 medium white onion (quarter cut)
3 pieces tomatoes (quarter cut)
150g radish (sliced)
1 piece green chili
4 tbsp. fresh calamansi juice
5-6 tbsp. fish sauce
600ml water + 200ml for tamarinds
